What to Cook When its Cold Outside?
With dropping temperatures as we head into the colder months of the Winter, suddenly the ideal dinner meal has changed. There is nothing better than after a long cold day outside, and coming home to a hot meal like soup. Soup provides a wide variety of options for those looking to enjoy a hot and delicious meal.
Another great thing about soup is that it can be enjoyed as a good side for really anything. You can pair soup with a salad or a sandwich. One of my favorite options is to make a grilled cheese sandwich and enjoy it with some tomato soup.
As a college student, soup can be a super easy and cheap meal to enjoy. Personally I love to stock up on Campbells Soup. This link to Campbells home page: Campbells, is a great place to browse all of their options. Some of my personal favorites are Chicken Noodle Soup, Homestyle Chicken Pot Pie, Broccoli Cheddar, and Steak and Potatoes.
One of my absolute favorite soups to eat is McAlister's Chicken Tortilla Soup. A great copycat recipe of that includes these ingredients:
- half of one medium yellow onion
- two table spoons of butter
- 2 cloves garlic
- 1 teaspoon chili powder
- ½ teaspoon paprika
- 1 teaspoon cumin
- 1 14.5-ounce can crushed tomatoes
- 1 32-ounce carton chicken broth
- ¼ cup cornstarch
- 1 cup heavy cream
- 1 cup shredded Mexican-style cheese blend
- 1 10.5-ounce can cream of chicken condensed soup
- 1 cup shredded rotisserie chicken
- 1 4-ounce can chopped green chiles
- ½ tablespoon chopped cilantro
- 1 tablespoon white wine vinegar
- 1 teaspoon salt
