Cheap and Easy College Meal: Chicken Rice Veggie bowl.

     Cooking in college can be a struggle for many people, especially for guys. Having mountains of homework to finish, intramural games to play in, and other social events to attend, can make us feel like we have no time to cook anything. While I often feel that same way, I have discovered multiple meals that are quick and easy to make. Over these next few weeks, I look forward to sharing the meals I make and the experiences I have while making them. 

    Something important to note about me and my cooking habits is that I am a type 1 diabetic. Essentially this just means classic college meals, like ramen noodles or an oven baked pizza, just wont work for me. My meals will consist of some alternative foods, which you could always switch out, and will generally be lower carb.

    This weeks meal is a classic staple meal in the lives of many college students: a chicken rice veggie bowl. This is a great meal that is quick and filling. It is also a cost effective meal, all the ingredients can be bought for under $5 and can be used to make multiple portions throughout the week. The ingredient's I used were:

  • Tyson's frozen grilled chicken strips 
  • HEB's fresh cut broccoli 
  • HEB's fresh bell peppers
  • HEB's frozen cauliflower rice
  • Parmesan cheese 
  • Trader Joes 21 Seasoning Salute
  • Olive oil
  • Butter
  • Soy Sauce (optional/interchangeable) 
    I started by heating up the parmesan roasted cauliflower rice, using this Pinterest recipe: Parmesan Roasted Cauliflower Rice. This step takes thirty minutes to complete, which is the total time of cooking this meal. While the rice is baking in the oven, wash and place your broccoli and bell peppers in a steamer within a pot. Top the veggies with butter and let them steam for around fifteen minutes at medium heat. Next, heat a pan with olive oil on medium heat for the chicken. Once heated, add the chicken and seasoning, I used Trader Joes 21 Seasoning Salute, and let cook for around fifteen minutes. Once everything is finished, add it to a plate with a sauce of your choice and enjoy!
