Thank Goodness its Finally Taco Tuesday

     Taco's are a staple of many people's college diet. Arguments still arise amongst the Baylor community on whether Fuzzies, Torchies, Fuego, or any other taco truck has the best taco's to offer. While I wont weigh into that conversation today, something I think we can all agree on is that those restaurants really are not that cheap. The meal for this week is a cheap alternative to going out for tacos, and is extremely easy to prepare. 

    One thing that's great about tacos, is that you can make them however you want them to be. In the past I've done traditional taco meat, using HEB taco seasoning on ground beef. You can also make breakfast taco's or brisket taco's. Really anything you would order at a restaurant you can make in a cheaper fashion at home.  This time I used the premade HEB chicken for the tacos. The shredded chicken, found here: HEB Shredded Chicken, is a great meat to use for taco's because it's already pre cooked and seasoned. 

    The ingredients I used for this meal were: 

  • HEB Shredded Chicken
  • 12 pack of corn taco shells
  • Shredded lettuce
  • Shredded cheese
  • Texas Texas salsa: roasted addiction
  • HEB fresh mild guacamole 
  • HEB chili lemon seasoned tortilla chips
    Once all your ingredients are purchased, the actual creation of the meal takes no time at all. I made this meal twice this week and used one box of chicken for six tacos. The first thing to do when preparing the tacos is to heat the shells at 350 degrees for four minutes While heating the shells, microwave the chicken for around two and a half minutes. Once these are heated, add toppings like cheese, lettuce, salsa, guac, and anything else you would want. 

    Taco's are a great option for having a variety of meals, yet having a similar/consistent base for that meal. It can even get to the point where if you don't want tacos, put all the ingredients in a bowl and smash up the shells on top of it. Even with the same ingredients it can provide a different way of enjoying a meal and add freshness to you cooking.
