Mini Pizza's: Low Carb and Delicious

     This week in the world of college cooking, we have a classic college meal. Pizza is obviously a staple point of many college diets. From buying a large Papa John's pizza for under $10, buying a Red Barron frozen pizza, or going to Shorty's Pizza Shack and getting cheap slices, pizza is a food many college students turn to for a cheap filling dinner.

    As previously mentioned in my other posts, carbs can create an issue for me being a Type 1 Diabetic. While I love going and getting cheap pizza just as much as anyone else, I have to come up with other creative alternatives for my pizza. 

    Thankfully, we live in a world of innovation and creativity where there are multiple alternatives for recipes. Take for example cauliflower crust, a lower carb alternative to normal pizza dough. Now I know what your thinking, that sounds disgusting. When I first heard about cauliflower crust I agreed, but after trying it I've grown to enjoy it and learned it tastes just like a classic thin crust pizza. 

    The ingredients I used for my pizza's this week were:  

  • Outer Aisle Cauliflower Crust (Can be found at HEB)
  • HEB thin sliced pepperoni
  • HEB shredded mozzarella cheese
  • HEB marinera sauce
  • crushed red pepper
  • ranch (optional)
    This meal is really easy to make and takes about 10 minutes to prepare. The first thing you do is lay your crusts on a sheet of foil. Then top the pizzas with marinera sauce, cheese, and whatever toppings you want. Preheat your air-fryer to 365 degrees and let the pizza's cook for about eight minutes. Once cooked add some red pepper flakes to the top and pour some ranch on the side. 

    This meal is a great way to enjoy pizza, in a cheap and lower carb way. Its a great quick meal that is also filling if you have a busy night. It has become a staple point for me whenever I can't think of a meal to make. I would highly recommend this meal, or a version of this meal, to anyone looking for some delicious meals.
